Oh the Horror, the enormous FAIL!!!

The cookies are ALL kinds of wrong.

I made two batches of dough last night,
enough for well over 10 dozen little chewy spicy "Ginger's Snaps"

I have made these for YEARS--I have all but rewritten the original recipe,
tweaking and twisting it into something that folks RAVE about...

As I bake them off this afternoon they are burning on the bottom before they can set,
and the ones I pull out early early are goo. Overly sweet, cloyingly over sweet...
and you cannot taste the spices at ALL.

THREE variables may be involved:

I tried a new stone ground whole wheat organic flour.
I always use whole wheat organic flour--this stuff just looked heartier and more yum.

I tried a new cinnamon, a Vietnamese 'high oil' cinnamon that smelled like magic
and was the deep red of Selma Alabama mud.

And there is a possibility that I should have gotten a new box of baking soda,
though the one I used was sealed, it has been on my shelf for a bit.

*HEAD IN HANDS*

They are all ruined.
I am mortified.

I will pack up the small handful that seem most close to being edible,
and stop off at Central Market and get Janet a little cake of some sort.
She must both know I TRIED annnd actually have something she can enjoy.

*sigh*

I bought all fresh spices yesterday--I triple the ginger
and they all just taste like cheap chewy energy bars.

I am usually quite good at this sort of thing.

i know this feeling so well. my baking heart goes out to you.
it is the way the flour falls my friend. sometimes the winds are kind and every so often they must shame us into humility.
i made macarons multiple times. modified the recipe and mad variations and everything. all the hype i read did not apply to me. i was like parchment paper!
nary a cracked dome, feet ruffling every time. i even made some for money.
then one day i made them and everything went wrong.
i have tried on occasion to pick up the pastry bag and will it back. but i think i am just not ready yet. i hope that in the summer the baking gods will be more forgiving.

i know we will all be golden brown again ginger, i just know it.

sounds like the flour. i've used vietnamese cinnamon with no odd results, and while baking powder can go wonky, baking soda is pretty stable.

if experimentation always worked, there would be a lot of odd couples that have been together since college.

i'm sure this was a minor misstep, that's all.
